Ricotta and Cottage Cheese

I've made them and it tastes so friggin' good. They're very similar processes except ricotta is heated to a higher temperature. I blog about it here:

Nice blog... I thought of a Western guy I know who is nice, but was whining about the lack of good brownies in Seoul. I was like, "Dude, it's not hard. Make them!" Your blog has exactly that attitude -- just do it, in a culinary mode. :) I'm going to try the cottage cheese.

(Done the ricotta before and it's good too.)

My ricotta salata has finally aged! It tastes amazing:
